Retired No One Told Me! Weekly Roundup…The friendliest animal in the world and the shocking truth about the Cook Islands and Timor Leste…

Weekly roundup (1)14 june

Welcome to my weekly roundup of posts which I hope you enjoy… I love roundups as it means I don’t have to worry about missing any posts from my favourite bloggers. Somedays I am just so busy or I get sidetracked and just miss some posts I think we all do, Don’t we????

The first post out of the starting blocks is Fruity Friday’s and last week it was the Cranberry… A fruit that I always just associated with Christmas but it is a fruit which is worthy and can enhance so many recipes.

There is also a bean called the cranberry bean…Did you know that???

Next up it was one of my Travel Thailand post and a beautiful waterfall which was very close to my house when I lived in Phuket …I love finding out-of-the-way places I don’t really like these revamped, busy new tourist attractions …I like finding the hidden gems and this little waterfall is one of those but it also links to other waterfalls so all is not as it seems at first glance.

Retired No One Told Me! Ton Tai Waterfall

Isn’t it beautiful??

This lovely waterfall was followed by one of my Travel Australia posts and Rottnest Island which is home to one of the friendliest animals on earth …The Quokka…

How to follow that well I didn’t Sally did with a wonderful post …Her weekly followup which meant I caught up …I still think I will keep my feet on terra firm but it was a lovely read so get your favourite drink settle down and have a read.

You will be treated to more of Sally’s shenanigans, there is a meeting with sharks, some interesting facts about the beautiful Iris flowers and some great news that I will have a partner in crime as Debby will be hosting a travel guide and I can’t wait as that is bound to be fun… So without giving too much away click the link below and say hello.

Next, we have The Charade and guess who is not as brave as he thought he was ???

This Carl just looks like what he is…A bit of a creep a third-rate, hard man…

It was then the turn of the last in a series of posts  I have been writing about Obesity and one which I was shocked to find that the causes of Obesity in the case of the Cook Islanders were the invasion of luxury resorts who built on their agricultural land… The country I thought had it all sewn up who ate healthily and exercised etc…In fact is poverty-stricken and the people malnourished caused by occupation and war… Not the outcome I visualised… It made me so sad…

It makes me so sad that my series has had to end this way that a once proud race who lived long lives are now reduced to a race who die prematurely with chronic diseases brought about by the invasion of luxury holiday resorts and a western diet.

The other group a race of people who build beautiful houses like those pictured and have a tradition of beautiful textiles and had their lives torn apart by invasions and war and are now dying from malnutrition brought on by poverty. A sad state of affairs for both and not the ending I thought I would be writing.

Lastly, I have given you the recipes for 5 Thai Curry Pastes you can make at home so head over to my cookery column at Sally’s where you can save them for later 🙂

Smorgasbord Blog Magazine – The Cookery and Food Column with Carol Taylor – #Pork! Perfect!

How to make perfect Pork crackling every time 🙂

Smorgasbord Blog Magazine

Pork! Perfect!

Welcome once again to Carol’s Cookery column and this week it’s one of our family’s favourite meats after Beef (now) I have found a butcher… I do hope that you enjoyed the Beef recipes last week.

Perfect pork crackling eludes many, and there is many a time when I am screaming at the screen when those cookery contestants don’t get their crackling crispy…

How to get perfect Pork crackling every time.

Nothing is better than perfectly crisp Pork Crackling.

How to achieve it, well, it’s easy!

When you buy your Pork, look for pork which has a layer of fat underneath the skin (this) produces the best crackling.

It has to be thinly scored, for this, I actually use a Stanley Knife and woe betides anyone who uses it for D.I.Y.

The piece of Pork I have pictured is a piece of Belly Pork approx 2 kilos and…

My 2nd ever blog post from 2014

old-2688341_1280

Update from 2014…Lily is now 5 yrs and at school…The farm has expanded and we are growing turkeys as well as other fruits and vegetables… I haven’t had another prang…since the last one! I hope you enjoy this earlier post…Happy New Year!

via Growing older is inevitable. Growing up is optional!

As 2017 draws to an end…A recap of last year…A preview of what’s to come in 2018?

new-years-eve-2937977_1920

I hope you all had a wonderful Christmas and are looking forward to what 2018 brings you.

First and foremost I want to thank all of my loyal followers for without you my blog would go nowhere… Some who have followed me since day one and others I have met as my blogging journey continues… wonderful friends who have inspired me to do better next year….. There are some wonderful blogs out there and each and every one of you in your way inspires me… For that I thank you ❤

So no long list of New Year resolutions for me (I don’t) generally do resolutions in print… maybe in my head or verbally to friends and family but in print… No!

So my  New Years resolution this year is to work smarter, schedule posts and allocate time to write and stick to it…

It takes time to build a following and if you are very lucky you will go viral as for the rest  of us it’s hard work and dedication… true…I have been blogging for 3 whole years now and have seen a steady increase in followers and views over the years especially in the last 6 months but it is a hard slog ..no easy route just hard work and of course writing posts which people want to read and want to come back for more…..

new-year-3041222_1920

My core readers come from the USA they all seem to like this whimsical, English lady and they are not even closely followed by the UK…You guys are awesome …so thank you ❤

My biggest source of views on social media comes from FB and Flipboard with Twitter/Pinterest pretty close in 3rd and 4th place.

Overall my highest views come through WP reader…

August and October were my highest views topping over 3K…..which for me reflect all the hard work I have done since last June and my sincere thanks go out to each and every one of you who have enabled me to reach those views…Thank you x

My best post being ” Beat the Blues with Food” and I truly do believe that food should be your medicine albeit sometimes alongside prescribed medication.

I always cook from scratch and that will never change…It is cheaper, easier and no nasties and I think that overall I have been surprised how easy it is to make some food items which in the past I have bought …Driven by the fact that where I now live I don’t have access to much of which I previously purchased from stores…

I also have a little more time to experiment and have I had some disasters along the way…Oh yes!

We also now grow much of our own including Turkeys and very soon I hope to have lots of little turkey babies as the mums are sitting on their eggs and have been for a few weeks now…Exciting times and I have seen lots of new fruits and vegetables spring up over the last year as well.

All of which will provide lots of ideas for my posts in the new year…I do hope you enjoy them…

Overall a good year for me but next year will see me spend time out ( I will) schedule more posts to enable me to finish my “Cookbook”..Come on…who doesn’t write a cookbook?

It will incorporate recipes I have discovered and been gifted since living here and recipes passed down through our family over the years…Coupled with my move to Thailand this has seen my outlook and recipe file expand greatly over the last 7 years…

I have also started a new blog called Orienthailiving  so please if you support me here it would be lovely to have your support over there… It covers travel, recipes and also it has associate links but this coming year I will be selling goods which I have locally sourced so if you love my Thai recipes I will be providing some of the pots and pans which we use here…

My idea is/was to keep my baby..my first blog completely separate…What do you think.?..should I merge them at some point this year????

Maybe it would be a good idea .. it would definitely make life easier for me…

I have also been invited to do a Food Column by Sally @ Smorgasbord Health which I am very excited about and will be sharing recipes from around the world including my tried and tested ones which have been passed down through  the family for generations and my chatter because you all know I can’t just write a recipe and leave it there…haha

My monthly slot over on The Recipe Hunter which is a wonderful source of truly tried and tested recipes…will continue with my next one scheduled for the 18th January 2018.

Last but not least my Cookbook or maybe 2 and then to complete my first stand-alone novel…I have short stories in two Anthologies…so thought it was high time I sat down and wrote a novel which is an extension of one of my already published short stories.

That concludes my recap of last year and my plans for 2018…

Thank you again to all my loyal followers you are awesome and I hope you have the best 2018…

new-years-eve-2840098_1920

I wish you all a Happy and Healthy New Year… Cheers!

Smorgasbord Christmas Posts from Your Archives – The 13 Trolls of Christmas! by Carol Taylor

This is one of my favourite archived Christmas posts promoted by Sally over on her blog and it still has that vein of food running through it…What with Sausage Nicker and Spoon Licker. I hope you enjoy this slightly scary tale….

Smorgasbord Blog Magazine

Time for the second of Carol Taylor’s Christmas posts from her archives and this time something a little darker.. but still fun.

The 13 Trolls of Christmas! by Carol Taylor

What fun..We all love to regale our children and grandchildren with tales from Christmas past…most real, some imagined and we all…Come On…Admit it!

We have all stooped to bribery, corruption or just plain tall tales to make the kiddiwinks BEHAVE!

Forget boring advent calendars….

Icelandic parents enthral their children (and scare) them into being good with tales of the Ogress living in the Icelandic mountains.

She is one scary Mumma, described as half troll/animal and the mother of 13 naughty boys known as the “Yule Lads”. Grýla lives in the mountains with her husband, her thirteen children and a black cat.

And that cat is pretty scary too….

Old Icelandic folklore states that every Icelander must receive a new piece…
