Ramen Noodles…Should you be eating them?

Today I am looking at what is in those packets of instant, quick cook Ramen Noodles which seem to line every store’s shelves in their hundreds. A packet for one or a multi-packs they come in pots and packages for ease of use BUT exactly what are you eating or giving your children to eat???

You just know that I am going to tell you…Don’t you???

Ramen noodles are particularly unhealthy because they contain a food additive called Tertiary-butyl hydroquinone (TBHQ), a preservative that is a petroleum industry byproduct. They’re also incredibly high in sodium, calories and saturated fat.

The containers packaging these noodles aren’t helping much either. The dreaded chemical bisphenol-A (BPA) is widely used in the styrofoam cups in which we often buy our ramen noodle lunches. Among other things, BPA may be a carcinogen. It is also considered a hormone disruptor, negatively affecting natural hormones in our bodies such as estrogen.

Between the preservatives and the packaging, instant noodles are a minefield of potential health problems. The more you eat, the worse it is. It’s just not worth the risk.

Yet Again, Proof That We Should Avoid Processed Foods

What is Tertiary-butyl hydroquinone (TBHQ), 

It is a synthetic antioxidant that is added to foods to prevent or delay oxidation. Oxidation causes food to lose flavour quality, colour and can even cause foods to become toxic. In addition, oxidation causes vitamins to break down, causing food to lose some of its nutritional value.

TBHQ, which stands for tertiary butylhydroquinone, is commonly used in foods such as crackers, microwave popcorn, butter and chicken nuggets.

Used to extend the shelf life of oily and fatty foods. In processed foods, it’s sprayed on the food or on its packaging to prevent discolouration and changes to flavour and odour. Others products, such as cosmetics, perfumes, varnishes and lacquers, contain TBHQ to maintain stability.

I am already feeling quite sick and so pleased that I have never had any of this pass my lips… I can’t say that for other family members…

Much of the hype surrounding TBHQ dwells on its relationship to butane, a component of lighter fluid.TBHQ is composed in part of a grouping of four carbon atoms, called a “butyl.” Many harmless substances, such as butter, also contain butyl. The word butyl is even derived from the Latin word for butter, “butyrum.”

Although TBHQ might be safe in small doses, that doesn’t mean it’s healthy for you. And since it’s used to preserve processed foods that are naturally oily or fatty, avoiding these foods would certainly be a healthy choice. When considering your health, do a bit of research before deciding that the popular account is the correct one.

I myself am very sceptical as so many foods which have been deemed to be safe for us have proved not to be and those who can are now in many cases wildly back peddling on their previous claims.

Myself I don’t wish to give anything like this the benefit of the doubt I would err on the side of caution and avoid like the plague…

Are there healthy Ramen Noodles?

There are so many noodles of different shapes and sizes and indeed much healthier for us…

Don’t be fooled by the seemingly advertised healthy broth because some varieties contain 10 to 15 grams of fat, which is equivalent to the calories in two to three pats of butter.” And the nutritional hits don’t stop there: A single restaurant serving of ramen can contain half of your recommended sodium limit for the day — What can a ramen Noodle lover do?

Simples…Make your own!

This guy is actually quite funny and his recipes good… If you really haven’t the time then these are some healthy Ramen Noodles…Google is a good source if you put in Healthy Ramen Noodles and then do a little research to double check.

Now doesn’t that look tasty and it is… Once you have made your broth it can be frozen in portions…If you are going to tell me that you are ultra busy at work and instant noodles are quick and easy then my response is what price do you put on your health?

You can take the broth to work with a container of some chicken and a container of vegetables and noodles of your choice…

It can all be put together very quickly and heated in a saucepan…Ready in 5 minutes and by the time you have left your office got to the noodle stall or supermarket and back again that could be 15-20 minutes gone…To assemble and heat is 5-8 minutes so a no-brainer and doesn’t that look so much better?

I know which option I would prefer and truly if you really are worried about yours or your family’s health and well-being then a bit of planning will soon become second nature and you will be healthier.

As for Ramen Noodles do I really want to be buying food laden with preservatives and nasties and which if I can’t eat in moderation will likely kill me or give me a chronic disease…

We all have a choice I know what mine is…Do you???

The potato is ideal Halloween and cold weather food a simple food that can be elevated into something quite warming and special.

How to bake…Simply select your potatoes and scrub them clean, dry them and poke a few holes here and there…I am sure many of you have witnessed the mess when potato bursts its skin in the oven…

Crispy Pork and Kale

Kanaa Moo Krob ผักคะน้าหมูกรอบพิเศษ

Ingredients:

  • 2 Belly Pork Strips.
  • 8 Large leaves of Kale.
  • 3/4 cloves Garlic. squashed with the flat blade of a knife.
  • 2/3 birds eye chillies.
  • 2 tbsp Oyster Sauce
  • 1 tbsp Soy Sauce
  • 2/3 shakes of Maggi Sauce.
  • Half tbsp. Oil.

Let’s Cook!

Cook Belly Pork in the oven until tender and crispy. For about 30 mins.

I normally cook on about 180/200 degrees to start and then reduce heat slightly to160 degrees. When the pork is tender turn up the heat to crisp the pork. When nice and crispy remove the pork from the oven and chop into bite pieces.

Heat the wok or large frypan and add half tablespoon oil.

Add crushed garlic and chillies, add little hot water and cook for 1 min…at this point the chillies may overpower you..ha ha….turn on expel fan and add chopped Kale.

Stems first if using as they take longer to cook. I use stems of Kale also if they are quite thick slice into 2-inch pieces.

Cook for 2 mins and add remainder of Kale leaves and turn over a few times ….I use fish slice as I find it easier to just turn kale over.

Thai crispy pork and Kale

Add 2 tbsp Oyster Sauce and 1 tbsp Soy along with few shakes of Maggi ( seasoning Sauce). Taste and adjust if necessary. Cook for further 2/3 mins.

Add crispy Pork turn or stir a few times to mix.

Kanom Moo Krob Thai crispy pork and kale

Check the seasoning again and serve with steamed rice.

Eat Smart, Eat Healthily…

Healthy eating should be a lifestyle choice

Healthy eating should be the priority and the habit of a lifetime…No fads, no weighing every day or week and then beating your self up because you haven’t lost anything.

It is about being aware of what you are eating and knowing if what you are eating is improving your health. It is not about removing whole food groups from our diets we need a healthy well-balanced diet to be at our optimum health.

What really matters is Our well-being, Our Blood Pressure figure, Our cholesterol, Our blood sugar, Our inflammation markers.

Last week I wrote about WW ( Weight Watchers) changing their thinking I wonder how far they will go and whether other diet plans will follow suit…

A question for you…In what way can I help you???

It is easy for me to sit here…I have no real barriers as in I don’t work any more which makes it easier for me…

But a little background for you… I have always worked, I have six children all grown up with children of their own… I have always cooked from scratch..sometimes out of necessity because cans or packets are generally only to feed the average size family and ours wasn’t.

I could have blown our budget and bought multiple packs of everything not only would that have been a storage problem but how to get it home or push all the trolleys required around the supermarket ..Or I could have broken it down into days and buy drinks one day, vegetables another day and still have time to work,clean, cook, do school runs and after school runs…It just wasn’t viable …

So I cooked and baked…I made use of my freezer and slow cooker and batch baked and cooked …

We had a plan and a routine it was the only way…

My first job every morning was to do the ironing and packed lunch boxes so when the kids appeared they got their pile of ironing to put away…

We had pets so whoever’s pet it was looked after it and kept the cages clean.

One washed the breakfast dishes… we didn’t have a dishwasher at that point, one dried and one put away…The biggest helped the littlest and I was never late for work and the kids were not late for school.

Did it hurt them?? Ask them!

The boys can cook, iron and clean and their wives love it!

I made no distinction between sexes…

They cook from scratch and are great cooks… Why? Because it was a way of life for us…Did they eat cake and biscuits…Yes, they did ..We had fun making them…The whole neighbourhoods kids were at my house on baking day and often we had a guest or two for dinner…That line of shoes always seemed to grow…

And as old as they are they still reminisce about holidays and food they remember me making big pots of stew and they all eat their vegetables…No fussy eaters… If your kids help prepare they are more likely to eat…

Family and community are key I believe to a healthy lifestyle we are sociable creatures aren’t we who need contact with others…

Much of that has been lost with the demise of families and friendly neighbours…Computer games and the like have also played a part…in sedentary lifestyles and other problems.

Well, that was a bit of a saga … Wasn’t it?

I still do most of what I have always done and always prepare food in advance… I portion up my meat or fish so I can cook meals during the day which are quick to do…Which is why I love the Thai way of cooking…Quick and easy just a few ingredients stir-fried and eaten with rice or noodles.

Now I am older I apply moderation more …I have eaten my fair share of chocolate and cakes and they don’t hold that fascination for me anymore ..that must eat feeling…Maybe because I have kicked the added sugar habit?

So I suppose what I am saying is if you have small children teach them to cook and help even growing some herbs or fruit…It will set them up for life …

A recipe for you…

Pork and Basil…….. 5 ingredients plus seasoning…

Ingredients:

For 1 serving.

100 gm pork loin sliced finely

2/4 birds eye chillies. cut in small slices.

2/4 cloves garlic finely sliced.

2/3 long beans( snake beans) chopped in small pieces.

2 stems Thai Holy Basil.

1 tbsp Oyster Sauce.

Shake or 2 of Maggi ( seasoning sauce)

1/2 tsp black soy.

Let’s Cook!

Put tiny bit oil in small frying pan.

Add chillies and garlic and cook for  1 minute then add your finely sliced pork loin-stirring until cooked about 2 /3 mins. Add Green Beans and Thai Holy Basil cook for further 2 mins.

In the picture, I have served it with cauliflower rice but I also serve with steamed rice it depends just how I feel… I absolutely love this dish it takes 15 mins max to make as long as it takes the rice to cook and if you are using cauliflower rice even quicker. You will also notice that I varied the amount of garlic and chillies I love both and use loads as well as many more herbs than I state in my recipes…

Homemade Mac & Cheese v processed Mac & Cheese.

What is really in your mac & cheese

Macaroni cheese… I don’t eat it very often but when I do I love it? A lovely cheese sauce some pasta topped with fresh breadcrumbs and grated cheese I also add sliced tomatoes around the edge…

Tasty and moreish it is a delicious meal.

However what about the boxed macaroni and cheese?

I will use Kraft as most people are familiar with their name and products…

Ingredients

INGREDIENTS: ENRICHED MACARONI PRODUCT (WHEAT FLOUR, NIACIN,FERROUS SULFATE [IRON], THIAMIN MONONITRATE [VITAMIN B1],RIBOFLAVIN [VITAMIN B2], FOLIC ACID); CHEESE SAUCE (MILK, WHEY, WATER, CANOLA OIL, MILK PROTEIN CONCENTRATE, SALT, SODIUM PHOSPHATE, CONTAINS LESS THAN 2% OF SODIUM ALGINATE, LACTIC ACID, SORBIC ACID AS A PRESERVATIVE, MILKFAT, OLEORESIN PAPRIKA[COLOR], ANNATTO [COLOR], CHEESE CULTURE, ENZYMES)CONTAINS: WHEAT, MILK.

Some facts about Kraft Mac and Cheese…

James Lewis Kraft, the founder of Kraft Foods, didn’t invent macaroni and cheese and didn’t even invent processed cheese, but he was the first to patent the process of emulsifying and powdering cheese in order to give it a much longer shelf life.

Every package of Kraft Macaroni and Cheese contains a package of mix to make the cheese sauce. The cheese sauce mix contains several milk ingredients: whey (milk protein), milk protein concentrate, milk, milk fat and cheese culture. The cheese sauce mix also contains salt, sodium tripolyphosphate, sodium phosphate and calcium phosphate. According to the International Food Additives Council, sodium phosphates help cheese retain its melting properties and calcium phosphate improves nutritional value. Yellow 5 and Yellow 6 are added to the sauce mix as colourings. Final ingredients in the sauce mix are citric acid, lactic acid and enzymes. According to the Food Additives and Ingredients Association, acids are added to foods as preservatives and emulsifiers. Enzymes are catalysts and may help the cheese sauce reconstitute properly.

When making Kraft Macaroni & Cheese, add your own butter or margarine and milk according to package directions. The products you choose affect the overall calorie count and nutrition of the product.

My Question is ??? If you are adding butter/margarine and milk why are you not making your own cheese sauce???

Colourings:

Yellow 5 is also known as Tartrazine or E 102. Yellow 5 is widely used in the making of potato chips, jams, candy, drinks and even pet food. It is also added to shampoo and other cosmetic products, as well as vitamins and certain medications. Yellow 5 is banned in Austria and Norway, and other European countries have issued warnings about their possible side effects. It is still freely and extensively used in the US.

My recipe for macaroni and Cheese:

Ingredients:

  • 2 tbsp Cornflour
  • 1 oz/ 25 gm Butter… I generally just slice it off the block so probably use a tad. more
  • 3/4 pint Milk
  • Salt
  • Freshly ground Pepper.
  • 3 oz/70 gm Cheddar cheese plus extra for topping.
  • 2 tsp Dijon mustard.

I have always used a flour/butter roux to make a white sauce and if that’s how you roll then that’s fine.

My son ( bless him) has turned it on its head and asked me why did I make it hard for myself….mmmmmm..teaching mum to suck eggs?

His version and now I have got used to it…it is easier. But am I going to tell him that…Nope!

Mix cornflour to a smooth paste with a little of the milk set aside.

Bring your milk to a slow boil, add the butter and let it melt.

Now..pour your cornflour mix into the milk in very small amounts stirring as you pour, repeating until all the cornflour is incorporated you now have a very smooth sauce.

Season with Salt and pepper and add Dijon mustard again stirring all the time cook for 1-2 minutes stirring to cook off the taste of the cornflour.

Stir in your cheese I use a strong English cheddar but you can use Gruyère cheese or another cheese of your choice or mix your cheeses.

All you have to do now is cook your macaroni as per the packet instructions and once cooked and drained stir into the cheese sauce …Top with a breadcrumb and cheese mix and brown under the grill.

Also if you like you could add some crispy bacon or ham just to make a change.

If you discount the butter and milk my mac and cheeses has 5 ingredients…The Kraft one contains a few more than that and colourings which are banned around the world apart from the US who just issue warnings on the packets…

That is caring about the consumer …NOT!

As I stated before consumers need to talk with their feet…You have the power, You are the ones who decide what you feed yourself and your family, You need to take action…

Swedish Meatballs…

These lovely meatballs are a family favourite which we have made and enjoyed many times they can be eaten with potatoes or noodles and pair very well with both.

Ingredients:

The Meatballs:

  • 1 chopped onion
  • 1 tbsp of butter
  • 1 kilo of beef/pork mince I use half and half.
  • 1/2 a cup of breadcrumbs
  • 2 eggs beaten
  • A tsp of salt
  • 1/4 tsp of ground nutmeg
  • 1/4 tsp of ground cardamom powder
  • 1/4 tsp of allspice
  • 1/4 tsp of Dill.

Gravy:

  • 2 tbsp of butter
  • 3 tbsp of flour
  • A large pinch of salt
  • A large pinch of pepper + 1/4 Tsp
  • 1 pint of beef stock
  • 1/2 a cup of single cream.

Let’s Cook!

Preheat the oven to 350F/170C

Melt 1 tbsp of butter in a large pan over a medium heat. Add the chopped onion and cook until transparent about 2-3 minutes.

In a large bowl combine the onion and all the meatball ingredients…   Using your hands to combine everything well. Once combined take a small amount of the meat mixture to cook to check and adjust the seasoning if necessary then using damp hands roll the mixture into 1 1/2 inch balls about 24.

In the same pan that you cooked the onions, cook the meatballs in batches …  …Cook the meatballs turning until all sides are browned. Drain on a paper towel covered plate.

In the same pan melt the 2 tbsps of butter with the dripping and the bits from the pan, whisk in the flour and cook for 1 minute.

Gradually add the beef stock, whisking when all the stock is added add the cream and cook for 1-2 minutes whisking until the sauce has slightly thickened.

Add the meatballs and gently spoon the juice over them and cook in the oven for 30 minutes.

Serve with boiled potatoes or pasta and steamed vegetables.

Fang-Tastic Friday!…Caramel Apples and death by Apple bobbing…

Welcome to Fang-Tastic Friday… Halloween is drawing near and I am sure lots of you have decorated your homes already please send me some photos so I can share your marvellous or scary themes and decorations…We would all love to see them…I would as Halloween is not really celebrated here or only by the American communities so no decorated homesteads just a few Halloween themed parties…

One of the most popular Halloween treats are caramel Apples…beautiful apples just harvested and everyone can help once you have made the caramel…Fun for all the family…

Does China celebrate Halloween? 

There are several days and a whole entire month in China that are similar to Halloween. These are the Hungry Ghost Festival, the Qing Ming Festival, the last day of the seventh lunar month, and the Spring Festival. …

The UK celebrates Guy Fawkes …Halloween is not so widely celebrated by many although growing in popularity… the manufacturers are jumping on the commercial bandwagon.

Did you know? The word “witch” comes from the Old English wicce, meaning “wise woman.” The plural for wicce is Wiccan. Wiccan were highly respected people at one time. According to popular belief, witches held one of their two main meetings, or sabbats, on Halloween night.

Owls are one of my favourite birds but in medieval Europe, owls were thought to be witches and if you heard an owl hoot then someone was about to die.

Halloween Superstitions: 

I wonder if anyone still believes or carries out these traditions? What Halloween traditions have been passed down through your family???

  • If a person wears their clothes inside out and then walks backwards on Halloween, they will see a witch at midnight.
  • Scottish girls believed they could see images of their future husband if they hung wet sheets in front of the fire on Halloween.
  • Girls who place the apple they bobbed for under their pillows are said to dream of their future love.

Some of these traditions seem a bit far-fetched to me I would image not very comfortable to sleep with an apple under your pillow…

But did you know that Agatha Christie’s Halloween Party Mystery Novel was about a girl who was drowned in the Apple bobbing tub ??
