Eat smart eat healthily eat to live

Healthy eating should be the priority and the habit of a lifetime…No fads, no weighing every day or week and then beating your self up because you haven’t lost anything.

It is about being aware of what you are eating and knowing if what you are eating is improving your health. It is not about removing whole food groups from our diets we need a healthy well-balanced diet to be at our optimum health.

What really matters is Our well-being, Our Blood Pressure figure, Our cholesterol, Our blood sugar, Our inflammation markers.

This week my exercise has stepped up big time we have little Lily staying with us for a couple of weeks and she loves riding her bike and swimming…

 

Sunday it was a romp in the park feeding the duck, fish and birds and then realising that the boats were way over the other side… I had forgotten how much energy 5-year olds have…Grandad by this time was a little less than impressed and when we finally got to the boats opted to people watch rather than spend an hour peddling the boat.

To be fair Lily did take her turn but it was a bit too much for a 5-year-old on her own but my legs and tummy muscles got a good work out…

It was also great fun…

Today I have insisted on a day in the kitchen…Baking …That is of course after we have walked to get our fresh Coconut juice as Lily loves it as much as nanny does…When she was small to get her to try something I used to tell her that she shouldn’t eat it as she wouldn’t like it…Of course, she would then want to eat it…Whose a clever nanny??? The downside now is that she eats anything and especially what I like so it is sort of a family joke…But she loves her food and helping to cook last night she stripped the mint leaves, cut the coriander and spring onions…I did the shallots and cooked the meat we then made a Nam Doc which is one of Lily’s favourites…

Gluten Free Mu Nam Tok ( Waterfall Pork)

It is quick and easy to make and although the name glutinous rice infers it has gluten it does not… it means sticky here. The rice is gluten-free.

Ingredients:

Serves 2.

  • 150/200 gm Pork loin or chicken
  • 2 shallots sliced thinly
  • Handful coriander chopped
  • Mint a big handful, stripped from the stem
  • A tbsp of ground roasted rice( recipe below)
  • 1-3 tsp dried chilli
  • 2 cheeks of lime
  • 1-2 tbsp Fish Sauce
  • 2 spring onions finely sliced

Firstly cook pork on a griddle or BBQ until just cooked allow to rest before slicing.

Thinly slice shallots.

Mix with coriander and mint leaves. Thinly slice pork and add to dish with shallots, mint and coriander. Also, add any juice from the meat. Add fish sauce, dried chillies, roasted rice and lime juice then gently combine and TASTE… Adjust seasoning if required.  Taste!

Serve with Sticky rice and a dish of washed Thai vegetables.

The meat for this dish can also be sliced thinly and cooked in a little water which a lot of Thais do…I prefer mine griddled I think it has more taste…

N.B: HOW TO DRY ROAST THE RICE.

Heat a small pan and add a handful of glutinous rice, stir to prevent it burning until the rice has coloured slightly a nice light brown, then remove from the heat and grind in pestle and mortar…Do not grind to a powder it needs to be a little coarse as it gives taste and texture to a dish. It will keep in a sealed container for about 6 weeks.

The good news I just jumped on the scales and another 1lb mislaid…Yeah!

So all in all a good week… Healthy Eating back on track and still no biscuits…

I /We would love to hear your tales of success and how your healthy eating is going…I know some of you are experiencing flurries of that cold white stuff called snow and will want lots of warming food but as long as you are eating sensibly and not snacking which to me is the biggest killer for Healthy eating or if you are snacking then some healthy snacks and some healthy snacks are really luscious.

This is where healthy eating really comes into play…No one likes getting the flu so here is a great post on how you can give your body a fighting chance against all these nasty germs and viruses…

I now have another little challenge for you… Are you up for a challenge? .. I feel just as passionately about waste and it saddens me when I see people living below the poverty line especially when so much food is wasted and I have taken up the challenge to monitor my food waste in my house…This was the topic of yesterdays post I gave the manufacturers a break from reporting on what they put in your food and came at them from another angle …The waste that goes into production…Tut tut…naughty manufacturers…

Eat Smart, Eat Healthily…

Healthy eating should be a lifestyle choice

Healthy eating should be the priority and the habit of a lifetime…No fads, no weighing every day or week and then beating your self up because you haven’t lost anything.

It is about being aware of what you are eating and knowing if what you are eating is improving your health. It is not about removing whole food groups from our diets we need a healthy well-balanced diet to be at our optimum health.

What really matters is Our well-being, Our Blood Pressure figure, Our cholesterol, Our blood sugar, Our inflammation markers.

Last week I wrote about WW ( Weight Watchers) changing their thinking I wonder how far they will go and whether other diet plans will follow suit…

A question for you…In what way can I help you???

It is easy for me to sit here…I have no real barriers as in I don’t work any more which makes it easier for me…

But a little background for you… I have always worked, I have six children all grown up with children of their own… I have always cooked from scratch..sometimes out of necessity because cans or packets are generally only to feed the average size family and ours wasn’t.

I could have blown our budget and bought multiple packs of everything not only would that have been a storage problem but how to get it home or push all the trolleys required around the supermarket ..Or I could have broken it down into days and buy drinks one day, vegetables another day and still have time to work,clean, cook, do school runs and after school runs…It just wasn’t viable …

So I cooked and baked…I made use of my freezer and slow cooker and batch baked and cooked …

We had a plan and a routine it was the only way…

My first job every morning was to do the ironing and packed lunch boxes so when the kids appeared they got their pile of ironing to put away…

We had pets so whoever’s pet it was looked after it and kept the cages clean.

One washed the breakfast dishes… we didn’t have a dishwasher at that point, one dried and one put away…The biggest helped the littlest and I was never late for work and the kids were not late for school.

Did it hurt them?? Ask them!

The boys can cook, iron and clean and their wives love it!

I made no distinction between sexes…

They cook from scratch and are great cooks… Why? Because it was a way of life for us…Did they eat cake and biscuits…Yes, they did ..We had fun making them…The whole neighbourhoods kids were at my house on baking day and often we had a guest or two for dinner…That line of shoes always seemed to grow…

And as old as they are they still reminisce about holidays and food they remember me making big pots of stew and they all eat their vegetables…No fussy eaters… If your kids help prepare they are more likely to eat…

Family and community are key I believe to a healthy lifestyle we are sociable creatures aren’t we who need contact with others…

Much of that has been lost with the demise of families and friendly neighbours…Computer games and the like have also played a part…in sedentary lifestyles and other problems.

Well, that was a bit of a saga … Wasn’t it?

I still do most of what I have always done and always prepare food in advance… I portion up my meat or fish so I can cook meals during the day which are quick to do…Which is why I love the Thai way of cooking…Quick and easy just a few ingredients stir-fried and eaten with rice or noodles.

Now I am older I apply moderation more …I have eaten my fair share of chocolate and cakes and they don’t hold that fascination for me anymore ..that must eat feeling…Maybe because I have kicked the added sugar habit?

So I suppose what I am saying is if you have small children teach them to cook and help even growing some herbs or fruit…It will set them up for life …

A recipe for you…

Pork and Basil…….. 5 ingredients plus seasoning…

Ingredients:

For 1 serving.

100 gm pork loin sliced finely

2/4 birds eye chillies. cut in small slices.

2/4 cloves garlic finely sliced.

2/3 long beans( snake beans) chopped in small pieces.

2 stems Thai Holy Basil.

1 tbsp Oyster Sauce.

Shake or 2 of Maggi ( seasoning sauce)

1/2 tsp black soy.

Let’s Cook!

Put tiny bit oil in small frying pan.

Add chillies and garlic and cook for  1 minute then add your finely sliced pork loin-stirring until cooked about 2 /3 mins. Add Green Beans and Thai Holy Basil cook for further 2 mins.

In the picture, I have served it with cauliflower rice but I also serve with steamed rice it depends just how I feel… I absolutely love this dish it takes 15 mins max to make as long as it takes the rice to cook and if you are using cauliflower rice even quicker. You will also notice that I varied the amount of garlic and chillies I love both and use loads as well as many more herbs than I state in my recipes…

Eat Smart, Eat Healthily…

No more diets, Healthy Eating

Welcome… This week will be slightly different I have not jumped on the scales but I am very pleased with my 12lbs that I mislaid…lol

However...Healthy eating should be the priority and the habit of a lifetime…No fads, no weighing every day or week and then beating your self up because you haven’t lost anything.

It is about being aware of what you are eating and knowing if what you are eating is improving your health. It is not about removing whole food groups from our diets we need a healthy well-balanced diet to be at our optimum health.

What really matters is Our well being, Our Blood Pressure figure, Our cholesterol, Our blood sugar, Our inflammation markers.

Believe it or not thin people are NOT exempt from any of those … I know people who are as thin as thin and boast about how many doughnuts they eat in a day…

Does that mean because they are thin they do not have high Blood pressure or cholesterol or problems with their blood sugar?

NO, it damn well doesn’t!

Of course, you will probably lose weight if you improve your eating habits…That is a bonus and a great one…

BUT…the true tests for your health and wellness…

How many of these can you say a resounding yes to??

  1. I sleep better
  2. I can walk faster and further
  3. I can walk up and down the stairs without getting out of breath.
  4. I can play ball with my kids
  5. I have clearer brighter skin
  6. 1 have an increased sex drive
  7. I have less or no joint pain
  8. I have more money
  9. I feel less stressed
  10. I have more energy

These are all benefits of healthy eating… Your aim should be to feel better, to be able to play with your kids or grandkids any weight loss is a bonus.

But how do we feel when we try to cut out or down we feel yuk! But it is a habit and a dependency on Junk food… We are Junkies.

What is a junkie? A person with a compulsive habit or obsessive dependency on something.

I am now going to talk about Junk Food.

When you stop eating sugar-laden food or processed foods you will get withdrawal symptoms you may experience sadness, irritability, tiredness, cravings…

Similar feelings to what anyone who tries to give up cigarettes, alcohol or drugs…You will experience Sugar Withdrawal and the first few days are always the worst …

It will get better!

I haven’t eaten Haribos or digestive biscuits(graham crackers) to some of my readers since I began these Tuesday posts… I even walk down that aisle now and can stop, look and walk on… It was hard the other day as they had those bright red strawberries and I did pick up the pack AND put it back.

I gave myself a pat on the back and thought about what I really fancied which would also be good for me…All the food which is good for our health is not tasteless like cardboard there are some really nice, tasty alternatives… There really are maybe try and make a list of what you really like and think about what you also like that you could replace it with…

Food should be enjoyable no one will stick to any eating plan if they don’t like what they eat… We are all different what I love you may not and vice versa…

We are in this together so let’s help each other out…

Interestingly I read the other day that after all these years Weight Watchers has changed its name to …WW

Wellness that Works!

Will this be a complete and utter overhaul?

My question is are they no longer having weekly weigh-ins? Will, there be no slimmer of the week, month, year?

Will they be using BP and cholesterol as markers?

I will be watching with interest because Wellness is different from Weight Loss…

Have we got any WW here who would be able to explain that to us??? We would love to know…

Good advice which helps me and a nice easy to follow chart…

Compare this picture and be honest what would you rather eat? This or the Junk food above I don’t mind if you say the junk food…But what do you want to enjoy that burger or can of coke or be healthy??? Even if you feel healthy and know you eat a lot of junk do me a favour and get yourself a health check sometimes we need that call…

Pasta and Pesto

Pasta cooks really quickly and pesto keeps in the fridge for up to a week.

A quick tip…To stop the basil turning brown Blanche the leaves in some hot water and then into cold…

A quick pesto recipe:

To make the pesto, combine basil, garlic, pine nuts and Parmesan in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside.

Store in an airtight container in the refrigerator for up to 1 week.

So take some rocket or other greens a few tomatoes and maybe a shallot finely chopped, top with some pasta and pour over some pesto…

Quick and easy and tasty.

Healthy Eating…Eat Smart…Lose Weight…

Welcome to this weeks boot camp…

Slowly, Slowly catchee monkey...Do you know the meaning of that??

A well-known saying which Originated way back in the days when a large proportion of far eastern countries were colonised and under British Rule, in their spare time soldiers tried and mostly without much success to catch monkeys as pets.

The natives showed the soldiers how to catch the monkeys by putting a cage with narrow bars and fruit in it close to the monkey’s habitat. They watched and waited while the inquisitive monkeys tried to get the fruit out through the bars. Once they had the fruit there was no way they were going to let it go but it now made them easy to catch as they couldn’t get their arm out without releasing the fruit….

As most natives only spoke what we term as ” Pidgin English” that was where this originated from….Slowly, slowly catchee monkey….

Well..this phrase is now used to describe a slow, patient approach to something and demonstrates that careful thought is often better than rushing in head first.

So….. That is why I am really pleased that I mislaid another 1 lb… Total weight loss…Tada 12 lbs…

You are also probably wondering if this lady has finally lost her marbles…That is, of course, another funny story…For another day…

As you know every week I bring you a recipe or two… Snack bars, granola, oats mixed with nuts are really not my thing…No taste unless you like the taste of cardboard…

Yes, I know...Nuts are good for you well I like walnuts, Brazil Nuts, Cashew Nuts, Almonds, Pistachios so that is good isn’t it???

Oats as porridge I like that ( sometimes) in biscuits with coconut very nice…as muesli, granola and snack bars…Not so for me…Due to the above reason…

Seeds…Well, I used to feed my parrot sunflower seeds…Just saying I suppose cooked with some honey as a snack they are ok… I do however love lotus seeds raw or roasted…

The point being I know many people eat them as a snack, when exercising etc ( they fit in your handbag ) and can be eaten on the go… so I thought I would make some using my favourite ingredients and then maybe I would get to like them and of course, they wouldn’t be like these shop brought ones and full of sugars with that boring bland taste…

Carol’s Snack Bars:

  • 2 cups of oats
  • 1/3 cup nut butter
  • 1/4 cup honey, proper maple syrup or agave
  • 1 1/2 tbsp Coconut Oil
  • 1/4 tsp salt
  • 1 tsp vanilla essence
  • 1 egg white
  • 1/3 cup of dried fruit chopped I used Apricots
  • 1/2 cup unsalted roasted nuts I used walnuts.
  • 1/2 cup coconut ( optional)

Let’s bake some snack bars…

With the oven on 350 degrees put the oats on a baking tray and cook for about 12 mins or until they are lightly browned( not burnt like my first batch) Remove from the oven and leave to cool down.

In a small pan add the nut butter, honey and coconut oil and warm gently add salt and vanilla essence and whisk until smooth, add the egg white and whisk again.

To the cooled oats add the nuts and fruit stir to combine then mix in your butter mixture, stir well until the oats are coated.

Line an 8-inch baking tin with parchment paper.

Pour in the mixture pressing down well so the mix is packed tightly or the bars will crumble when you cut the bars using the snack bars into pieces.

Bake on 350 degrees until the mixture is lightly browned around the edges about 20-25 mins depending on your oven.

Cool the pan on a wire rack for about 15 mins then lift the mixture out using the parchment paper.

Cool completely and cut into squares or oblongs.

They will keep for about 2 weeks in an airtight container or they can be frozen and will keep 2 months in the freezer which is handy if you make do a bulk cook…

Did I like them?? They were ok I just prefer other types of snacks but the hubby and grandson loved them…

Healthy Eating…No more Diets

No more...Diets Healthy eating (5)

Welcome to Carol’s bootcamp…

I am back and madly scheduling posts so that I don’t get put in the same position as I have been for the past few weeks having to do what I can on my phone and iPad…Not ideal I love my laptop which is now much better .

Healthy Eating...I was doing so well wasn’t I? but I admit the frustrations of the last few weeks did reflect in my diet although I will say keeping my food diary  did help… I stayed the same last week which in itself was a minor miracle given that I snacked somewhat…

Hands up! I did ! Snack that is…. But it was yummy x

However because I was so stressed and had to go back to the laptop hospital on more than one occasion and as I take buses and walk…The location does not have a direct bus link  the weather was also not kind …Tropical storms… If I didn’t know better I would have thought the whole world was against me but I am made of sterner stuff than that… British backbone came into play…

Although I still snacked  I had Sally’s list and the food diary to keep what I was doing in prospective… in other words it could have been worse…

The upside was I walked more… on a couple of days I walked 2 miles or 3.3km whatever way you measure it so over the week I clocked a few more miles ..It is amazing what frustration does to me…I walk it out of my system so whatever works for you..utilise it!

Hence probably why I stayed the same…THE BONUS ..This week I lost 2 lb ..Was it because I was much better and got straight back on to my normal eating plan or was it also a combo of the increase in my exercise?? A bit of both methinks..

So in my book my disaster was also a triumph.

My week has been good I got lots of fresh vegetables from one of my local markets, some picked crab…I do hate picking  crab  myself so fiddly… Some lovely fish , fresh coconut as both hubby and grandson love a piece of fresh coconut to munch on, Some lovely fish cooked in a banana leaf with lemongrass and chilli which was our snack when we got home ….

Today on my daily walk I picked up some lovely fresh green tea leaves as I do like a cup of green tea now I know how to brew it properly I don’t like bitter tea there is nothing worse than bitter green tea is there ? Although I also like Matcha which is more mellow in taste…If you don’t how to brew a nice cup of green tea I have added a link for you.

This week I will now be swapping my early morning ginger, ACV and honey for green tea I like to vary my early morning drinks …

I also picked up some lovely fresh Longan honey which I hadn’t tried before but my friend Mr Google told me it was very good and healthy so I was pleased…. I mostly use honey if I need to sweeten anything…like natural yoghurt which brings me nicely to the little bit of research I did on yoghurt while my laptop was sick …also because I had noticed a lot of Greek style yoghurt on the shelves where I buy my yoghurt and wondered what the difference was…It is interesting and yoghurt as I found out is not as healthy as they are advertised to be…So if you missed it then the link is here for you it makes interesting reading especially if you or your family eat a lot of yogurt.
