Those of you who know me know that I love a cause and a rant and I hate those pesky double-dealing underhand Manufacturers and Governments who allow it…

As Monday is a day which many don’t like it is my let off the steam day. I have uncovered what really is in your Hot Dog, What is in your Mac and Cheese and also what is really in your Vanilla Ice Cream and trust me I have only just started… Tomorrow though I thought I would give the manufacturers a break or will I ??

The subject is Waste...Food Waste…something which I believe we could all do something about…

Blogs I like …Sally Cronin writes some brilliant Health columns …I have learnt so much from those columns and I am sure that you can … The last couple of posts have been on the dreaded and sometimes fatal Flu Virus and what we can do to help ourselves and get our bodies prepared for the onslaught of those seasonal germs and viruses.

Posts if you are serious about your health then you shouldn’t miss.

Sally also allows me to stretch my culinary legs and every Wednesday I can be found over on Smorgasbord…After my exposure of  Hot Dogs, I thought it only fitting that I should give you all the information that you require to make your own sausages.

No More Diets and Healthy Eating is the subject of my Tuesday’s posts where I give you recipes, information and other snippets to help you along your path to Healthy Eating and I do also have a quiet little rant at times…lol…I don’t believe ( unless) it is for a properly diagnosed health reason that one should eliminate whole food groups we need a well-balanced diet to be fit.

About Carol Taylor:

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetable ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use contain to improve our health and wellbeing.

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome! I hope you enjoy the ride also and if it encourages you to take a step into the unknown or untried, you know you want to…….Then, I will be happy!

Retired No One Told Me! A roundup of posts…Cabbage, Pumpkins, Bananas and a tour around the culinary Alphabet…H.

Where have I been…Phew well, it started with my laptop going kaput…Then a combination of others things and a catchup and scheduling of posts so that I don’t get put in that position again.. you know how it is all of a sudden you are inundated and then I had a girly few days away. in not so sunny Phuket..

Before I knew it September had started so I have picked a few of my favourites and am taking this chance to tell you of a few changes afoot…No… not more flip flops…lol

I am putting Fruity Fridays on the back burner, for now, to be replaced with Fang-tastic…Food( Halloween) and then Christmas Crackers… I know for many of my readers Halloween is a special time of year and always celebrated in style…So I will be bringing you everything that is Halloween including Spook-tacular recipes, games, decorations and a few spooky facts…

It will be followed by Christmas Crackers from the 9th of November…

So get comfy, snuggle up in your favourite chair and have a read…

The first post out of the starting blocks was an older post of mine on the Coconut…Which once again has hit the headlines…Myself I will continue to have my daily glass of coconut water and when suitable I will use coconut oil in my cooking and if I am frying…I do not believe all I read and like to make my own informed decisions on my food and drink and as always moderation is the key as is a well-balanced diet…

Next came a reblog… a poem written by a fellow blogger, Ellen Best on a subject which I was horrified to discover was still really prevalent and happening in this so-called enlightened society… A poem which is very well written and highlights the horror of which I believe we should all be aware and when possible add our voice.

Never throw any bread away …There is always something you can make from the odd little bits just freeze them until you have enough or blitz into breadcrumbs and freeze.

My new Monday series on what is really in your food…started out just as an inquiry for me on something I wanted to know and has escalated from there…I have been truly amazed, shocked as I thought I knew quite a lot and thought I knew what to avoid I am on a big learning curve ..Once again on my soapbox but the posts are proving to be very popular so will be a regular Monday feature for a while.

banned-1726366_640 2

I was shocked to find that man preservatives banned in Europe are still being used in food manufacture in the US…Shocked to the point that if the said food is exported to Europe from the US those banned substances are not used but still used in food for consumption in the US…I just can’t get my head around that…

My healthy eating food posts on a Tuesday are also proving to be very popular …Tune in on Tuesday as I did tell you last week that no food diary would be completed as I was away on a girly few days…

No more...Diets Healthy eating (6)

https://blondieaka.wordpress.com/2018/08/28/healthy-eating-no-more-diets-3/

My Wednesday Cookery Column over at Sally’s was all about the humble cabbage which I love as a vegetable cooked or raw…

Autumn and Winter is coming and in some climes, the weather is getting cold enough for the heaters and boilers to go on…A cautionary tale from Sally which you would be well advised to listen to…

My mum used to love squeezing boils and pimples and digging out splinters but she then started to use this salve recommended by her mother and not so much digging around in some poor unfortunates flesh was required as you could pop the splinter out as it draws it to the top.

https://blondieaka.wordpress.com/2018/08/07/healthy-eatingno-more-dietseat-yourself-slim-2/

I then read a post from fellow blogger John Reiber and it was about roasted watermelon a fascinating post and I would definitely try it not saying I would like it but who knows …Have you heard of this dish? Have you tried it???

It would certainly mess with your taste buds…

Retired No One Told Me!..Weekly Roundup… It’s all about the Flavour…

Welcome to my weekly roundup …you know the procedure by now..comfy chair, a drink relax and enjoy!

lady relaxing kindle-1867751_1280

My first post week was one which bought back memories of a lovely holiday in Malta and their lovely National dish of rabbit stew which in turn made me remember my granddad and my uncle Ken…Both of who worked on the land and taught me much when growing up…The rabbits were mostly poached(shhh) and his ferret definitely not a pet but that is life and how it is…The rabbit stew, however, my mum and Nan used to make..I loved it!

Enjoy recipes and I think I will be making my first octopus dish as Jovina’s recipe sounds and looks glorious…

https://blondieaka.wordpress.com/2018/07/29/cooking-the-mediterranean-island-countries/

Then it was my regular Tuesday No more Diets …Healthy Eating… I started keeping a food diary as I had decided no more biscuits with my morning cuppa…Day 6 and No biscuits I sent Lily home with the biscuits so as to avoid temptation…How did all this come about? I read the lovely Sally’s post and perused the chart she provided and was shocked that those two biscuits could have such an impact so I duly weighed myself and started my food diary…

The plan??? Keep the diary and weigh myself every Monday( no hopping on and off the scales)…Well…Today is Sunday and the lure of the scales just too much…4LBS… OFF!

You two are so dumped from my diet…

I will also be truthful and did dump the Haribos only little packets of jellies but nearly every night… 2 things and 4 LB in 6 days…

Thank you, Sally, for getting me refocused …Hugs! xxx

https://blondieaka.wordpress.com/2018/07/31/healthy-eatingno-more-dietseat-yourself-slim/

Wednesday is the day I can indulge my passion for cooking courtesy of Sally and this week it was my favourite recipes …The recipes I make the most instead of buying them…

Healthier, it saves me money…A no-brainer really and it takes less time to make them than it takes to get in the car, negotiate the traffic, find a car parking space and then queue at the till and you still have to drive home…

https://blondieaka.wordpress.com/2018/08/01/smorgasbord-blog-magazine-the-cookery-and-food-column-with-carol-taylor-fajita-spice-tahini-peanut-butter-hummus/

Following on from Fruity Friday and the red Bananas I discovered along with some things I didn’t know …That all red bananas are not naturally red…The ones on the bunch are but not the pretty looking red bananas in a dessert…They are red because they are cooked in Lime water?? A trip to the local market with my daughter in law and we found the red paste…Spoiler Alert!

Small cooking bananas

Today I will be cooking the green bananas and turning them into a red dessert and all will be revealed on Friday…..

https://blondieaka.wordpress.com/2018/08/02/what-is-lime-water-nam-pboon-sai/

It was then the turn of one of my archived posts about the tradition of charcoal making down on the farm which the lovely Sally once again showcased for me …Such a generous lady is our Sal xxx

charcoal-pit

The tradition of making charcoal here in rural Thailand.

Date time…I should be so lucky as sung by Kylie… Stuffed with blue cheese they are a wonderous thing or wrapped in bacon… I love those beautiful patterned Tagines, don’t you???Fruity Friday Dates (1)

https://blondieaka.wordpress.com/2018/08/03/fruity-friday-dates/

Lastly …Are you still with me??? Do you need to take five, top up your cuppa ???

Lastly, I took you on a journey through the 5 tastes of  Thai cuisine the ingredients which make up those tastes of Spicy, Sour, Sweet, Salty and Bitter…

fresh cut limes-1239267_1280

How you don’t get a starter, main course and then a dessert here… Even in a restaurant that serves western food Thais don’t get the concept of individual courses as their food is about the whole meal and how the flavours compliment each other how if you have a hot curry you will get a mild but tasty soup and stir-fry…

Which is why a Thai recipe is a guide as chillies vary in heat, fish sauce can vary by brand, depending on the time of year the taste of limes vary which takes me back to what I always say to you TASTE and TASTE again build your flavours to suit your palate and then you may be able to say I can cook Thai Food …

It has taken me 10 years and I am still learning…

Weekly Roundup 28th July

Welcome to Saturday’s weekly roundup there has been lots going on this week as well as the rain ( it is) low season but it is quite welcome as it cools it down a little I am getting quite good at sleeping with the steady drips from my leaky roof in my ears.( yes) still leaking and they came to mend it this week.. Anyway enough of water and rain as I know many of you are praying for rain which I hope you are blessed with very soon… First off this beautiful looking protein drink.

Retired No One Told Me! Weekly roundup…Stink Beans, Stuffed Peppers and Safe traveling tips.

Weekly Roundup 22nd July.jpg

A tad behind this week… Just circumstances and the fact I had my nose in a book…Yesterday I went on a road trip to get little Lily who wanted to come and stay with us for a few days…At least then her mummy can weed the rice and not have to keep an eye on Lil’s who is just off to the pool with her brother and dad having just thrashed grandad at snap…Lol…I think he does let her win most of the time…

I hope by now you are used to the routine and have your favourite beverage and are comfy and ready to have a good read, there are some cracking recipes from me and Sally so maybe have a snack handy as well as you might be a tad hungry by the time you have finished reading.

lady relaxing kindle-1867751_1280

My first post of the week was my take on Old Bay seasoning ..I make all of my spice mixes and I find it then means 1.I know what is in it and 2. I have a better, quicker rotation of spices hence they are fresher and the third it is much cheaper…Cost-effective…

Then as so often different terms and names are applied to the same product or produce around the world…The internet can be a wonderful thing but can also cause much confusion with terms so I hope I have cleared a few of them up for you I am sure there are many more.

https://blondieaka.wordpress.com/2018/07/15/you-call-it-what/

It was then Sally’s turn with a beautiful sounding recipe for stuffed peppers and fajitas which I thought was worth a share… Thank you, Sally 🙂

https://smorgasbordinvitation.wordpress.com/2018/07/16/smorgasbord-health-column-summer-eating-stuffed-peppers-and-fajitas/

Bootcamp…With some healthy and tasty foods for those hot summer days which many of you are enjoying around the globe and healthy does not mean boring and tasteless…Forget about those bland rice crackers and the like …There is food here to enjoy and savour…

Summertime carol Cook's

Wednesdays mean my weekly cookery column over at Sally’s and this week it was Rice…my favourite carb and of which there are so many different varieties…Recipes both sweet and savoury just for you to enjoy…

https://smorgasbordinvitation.wordpress.com/2018/07/18/smorgasbord-blog-magazine-the-food-and-cookery-column-with-carol-taylor-carol-cooks-rice-savoury-and-sweet/

Stink Beans do to your urine what asparagus does … Makes it a little smelly but paired with some hot spicy curry paste and pork it is a lovely thing and a very popular dish here in Thailand …

https://blondieaka.wordpress.com/2018/07/18/down-on-the-farm-spicy-pork-with-stinky-beans-mu-baan-phat-prik-sa-tor/

Back over to Sally whose Health advice is invaluable and in layman’s terms means I can understand it… Many chronic conditions can be helped not always cured but helped by changes to our diets. I mean if you do that and cut down on tablets and medicines is that not better? I think so… who wants to rattle when shaken?…

https://smorgasbordinvitation.wordpress.com/2018/07/18/smorgasbord-health-column-nutrients-we-need-manganese-and-the-link-to-asthma/

Sally is kindly reposting a few of my archived posts on a Thursday and this one is a beautiful red Lily Lake..wetlands full of wildlife and very beautiful when the Lily’s are in bloom.

https://smorgasbordinvitation.wordpress.com/2018/07/19/smorgasbord-posts-from-your-archives-travel-the-red-lotus-sea-lake-thailand-by-carol-taylor/

Those of you who know well know how much I dislike most manufactured foods and products and that if I can make a great tasting substitute then I will…This is my third different protein shake and it came a close second to my favourite raspberry and beet protein shake.

ttps://blondieaka.wordpress.com/2018/07/20/papaya-and-banana-protein-shake/

Lastly, my fellow blogger, Debby has joined our team over at Sally’s with a travel column and it is great …There is no one better suited than our Deb to host a travel column and already I have picked up some great tips and ones which could save me both money and a travel disaster…Well worth a read…

Retired No One Told me! Weekly roundup…Roses, Rambutan and a Rescue…

That was the week that was… A thrilling rescue by some very brave men who risked life and limb and for one he did forfeit his life but what a legacy he has left and he will be forever remebered in the hearts of so many…

There is also Roses, Rambutan and rice salad… Also, lots more so get yourself a drink, settle down and have a good read…

Fruity Friday last week was the luscious Rambutan fruit…fully in season and a joy to eat… It looks scary but the fronds are so soft, a pretty fruit known as Chom Chom in Vietnam which means messy hair.

We then had young Paul from over at Sally’s with a delightful post on Roses…Which invoked many memories for me from my dad’s rose garden to crab apple jelly and the belly ache I used to get from eating the crab apples and the beautiful dog rose… A plethora of memories…

The bread did indeed come after the crumpets… My disaster with the proving of the yeast was a learning curve…Use a bigger container… Carol

The watching and the waiting culminated in a most daring rescue all 13 are alive and well… A testament to the bravery of men and women from around the world…Instead of the post which was asking for the safe exit of the 13 … A video

Truly a miracle …
