Retired? No one told me!

Are we all happy with that?

I am because if I hadn’t retired to Phuket I most certainly would not be blogging, I would not be warm( it’s so hot and sunny here), I would not be making my own ham and bacon, I would not be a published author the list is endless.

Why? I can hear you all saying.

Choices, circumstances, call it what you may….. sometimes we have to just be brave, go with the flow, listen to our hearts, be a little selfish…..yes why not…… years ago and I mean years ago I wanted to study Law…..I got these looks, comments…why Carol? you have a good job, you have a family why…all these puzzled looks…..why? for me, because I wanted to……so I enrolled…… time to study!

One year on! My way forward

And what a year it has been!

Living in the north of Thailand is completely different to Phuket but I have also discovered much more about Thailand and its culture, traditions and discovered so many different fruits and vegetables.

So in some ways because of the move, it has taken me a while but I have decided now on my way forward.

The last post I wrote had a very good response with reblogs, shares and views/reads on a few of the different social media’s.

People are obviously interested in health both bodily and mentally and looking at food to help them achieve that and food which can work alongside any medications that is prescribed for you.

As those of you who know me know that none of my recipes are just a recipe but also contain other titbits of information.

I know I can waffle with best of them…lol

My recipes will now contain at least one and possibly more ingredients which will help you reach that goal of eating more healthily and also start to learn that it is important what we put in our mouths for our children’s health and our health.

We read a lot about buying organic foods and yes it is sometimes way out of some of our budgets but even if you only have a window box I hope I can help you learn what it is best to buy organically and what you can buy through your normal shopping channels knowing it is safe and also what you can grow.

 

A lot of the articles I read bombard me with information and sometimes I just switch off because I am either too busy or I just haven’t got a clue or just because I don’t like the sound of the foods which it is suggested are good for me. Who wants to eat boring unappetising food?

So my aim is to keep it simple and not bore you with jargon.

I want to give you recipes for the whole family that encourage those who are faddy eaters to try things. Give you alternatives for some ingredients that may be cheaper or more palatable to some and indeed a lot of the recipes I have come across I don’t really want to eat ….I may change my mind when I try them or make a few changes and that is also what food is about adapting it and of trying new ways of cooking and it makes food fun and enjoyable and that is what food should be about.

Whether you only have the weekends to cook or when you are on holiday but learning how to adapt your cooking to your lifestyle take one step at a time because it is no use running yourself ragged as that is not good for your health either.

For example, a lot of the food I cook is just for me. So I buy my meat or fish and cut it into portions and freeze it. If I cook a chilli I freeze individual portions it is all about planning.

No one has to spend hours in the kitchen if you plan and prepare. Put the slow cooker on before you go to work and when you come home a beautiful meal is ready to eat.

Put porridge in your slow cooker overnight and it will be ready and waiting for when you come down in a rush with no time to cook and just enough time to eat.

I plan to write some cookery e-books with my favourite recipes in for you.

So in a nutshell, I want to give you the information so that you can make your own decisions on how to feed your family for optimum health. Feed your family normal food. Food which encourages faddy/picky eaters because then you stick to it because you love what you are eating.

I plan to self-host my blog very soon and I will be adding affiliate  links for products that I use and love not just a fancy product which costs an arm and a leg and doesn’t do what it says or is so difficult to clean that it puts you off using it or you just plain don’t have the cupboard space to store it.

The final part of my plan is that when I have this in place I will have the time to finish my novel which is a long time coming…lol

Oh, and I haven’t started on the chooks and farming but that is also on track.  We are the proud parents of some baby turkeys …..Why Turkeys? Because I haven’t been able to buy one for Christmas dinner for the last two years and so I thought I would grow my own…They are adorable, so friendly and make lovely soft, happy noises…They seem to love their new home although they are having to stay in the smaller bit for another few days..just so they get used to their surroundings and where their food is…

 

But I am focused and ready to move forward.

Who can you trust??

How reliable is the information that you read online? Particularly if it is about your health or the health of a loved one?

It is a veritable minefield out there and so many sites write anything to either sell their product or get your e-mail address so they can sell you their product or so they can flood your inbox with what they think you want to hear and sell you that information.

If you are looking for something and are faced with page after page of information then firstly remember you can PAY to be at the top of a search engine so just because they are top and not on page 105 doesn’t mean that what they are saying is true.

It is very easy to be taken in when you dearly want a “cure” or ” remedy ” but please it is not nice to have your hopes dashed when the product doesn’t work or causes a bad reaction.

CHECK: 

If you’re visiting a health website for the first time, these 5 quick questions can help you decide whether the site is a helpful resource.

Who?      Who runs this website? Can you trust them?

What?     What does the site say? Do its claims seem too good to be true?

When?    When was the information posted or reviewed? Is it up-to-date?

Where?   Did the information come from? Is it based on scientific research?

Why?      Does the site exist? Is it selling something?

Don’t rely completely on online resources if you are considering alternative methods of treatment. Talk to your health practitioner they often know of tried and tested alternatives or an alternative that runs alongside conventional treatments.

As I stated in a previous post ” one size doesn’t fit all” What works for your friend’s friend may NOT work for you.

If It is a cure for cancer the Organisations like the Macmillan organisation would be a good starting point for accurate information.

These large organisations have the funds and the knowledge and would likely know or have heard about any conventional cures or natural cures.

Health food so much info on the market ..where to go? Who to talk to? Is what you ARE reading on Social media True or false? As a general rule if the website it leads you too ends in .gov or .edu they are a trusted source although e-mails received ending in edu may not always be. It is definitely a minefield out there.

I promise you that when I am giving you facts about fruit and food then I double-check the information or have used it myself.

I even check an e-mail from my bank before I open it that is how much I distrust anything sent to me or when I read an article I check either on the news or a publication that I know is always up to date. As the date is important as well, just because it has been posted now doesn’t mean that the news is current…always question and look that little bit further….It is your health and your families at risk so trust your gut and do the basic checks.

The internet is a wonderful source of information it is also a dark source of incorrect information.

Please be one of the growing number of consumers who are aware, who are not being taken in by so-called celebrity endorsements of which there are so many. Be one of the ones who makes a decision on your family’s health and the food they eat by being informed and making that decision yourself.

Be happy and confident that you have done your best and made the best information on your own findings and there are some wonderful blogs and websites who give out fully researched information.

And have fun when you are researching …I know I have …I have discovered some wonderful fruits and vegetables with so many medical benefits.

BUT…. MODERATION UNTIL YOU KNOW IT SUITS YOU.

I have a plan!

Oh yes I do! I keep telling myself that…. I have re-written my white board.

I have allocated myself time slots for WordPress, Niume,mytrendingstories, my novel, Research…Now all 5 of these are important ( to me)

I have booked regular Skype meeting with my publisher and she will crack the proverbial whip!  I am in no  doubt about that…Why?….Because I am..she is fierce…well …a pussy cat really!..

I have in the past:-

Shilly-shallayed, hesitated, dithered, dawdled, pondered,lingered, too long on reading blogs, trying to fathom Twitter, Scrivener, You name it….I just do it..no concept of time and before I know it…The day has gone….Disappeared 😦

So the time has come……A new me….an organised me….with time slots…..will it work????

Who knows…..I will set my timer…Oh yes….A Timer!

I have set myself a break…. Time to check mail, FB, etc, etc, etc…………And time to shop, cook and explore my surroundings, (although that could be classed as research) Mmmmmm

Pondering now….What does Vino time come under???????????

Will this turn out to be ” The best laid plans of man and mice” scenario????? Or will it WORK???????

A Fifties Child

Born in the early 50’s, one of 3 and the oldest we had no Tv or phone we played out until dark and sometimes we were out all day playing in the woods, making camps…I was definitely not one of those girls who played with dolls and pushed someone else’s baby up and down the street..for fun! Really…I was  a tom boy…one of my earliest memories was this pink spotted dress my mum made me…she made all our clothes and I remember that when the elbows of our cardigans or jumpers wore thin my mum unpicked the sleeves and changed them over so the darned patch was in the crook of our elbow.

I also remember climbing the big old Oak tree in the middle of the green and catching the said pink dress and tore it! Girls then did not wear trousers only skirts and dresses.

We made tents in the garden by slinging a blanket over the clothes line…..Played how high can you jump with a pole on two sticks…until my dad shouted at us as we made a bare patch on his lawn. I remember playing jacks and hopscotch on the pavement( we then) had to clean every bit of the chalk of the pavement when we had finished playing.

Collecting the empty bottles and taking them back to get a penny and how many sweets could you get for a penny?

I remember moaning like hell when my mum combed my hair after washing it and the rags she put in so we had ringlets( and how they hurt to sleep in). I also remember her taking us to the hairdressers as she was fed up with moans and me getting this fringe…..I promptly got the scissors out when I got home and cut it off..stating I don’t have a fringe now.

I also remember how much I used to write for homework..pages and pages..my teachers must have groaned..not half a page for me. When I got the ” A” my mum would say very nice dear…my dad..not much…he thought girls just got married and had kids.

Our first TV…..Took pride of place in the parlour ..the best room..the one we only used on high days and holidays or when people visited.

Most of my friends wanted to be teachers, hairdressers, nurse, shop assistants ..none wanted to be a pop star or celebrity.

But we were happy! Why?

Ask yourself?

So true to life…I got married, had the kids..blah blah blah

Then I retired..…went to Thailand….joined Phuket Writers and wow…….. An anthology, a novel in the pipeline, writing for a New York website, a collaboration with Sally from Smorgasbord Health 2017  so much to do and who knows how much time….I am having fun on this ride and do not want to get off….

And all because this child of the fifties had a dream.

So I believe if you dare to dream…then you can!

I see that happiness in the faces of the village children here..who have very little…the boys ..a bike, they fish..a stick with a cord, they run, they climb trees, they laugh..why?

 I hope at least one of them has a dream!
